When we find ourselves with a surplus of farm fresh eggs, egg salad sandwiches make a great lunch that the whole family enjoys.

Recipe:
6 Hard Boiled Eggs*
1/2 cup of Mayonnaise
1 tsp Prepared Mustard
1 tsp Dijon Mustard
1 tsp Louisiana Style Hot Sauce
1 tsp Sweet Pickle Relish
1/4 tsp Salt
1/4 tsp Black Pepper
*How to hard boil eggs: Place eggs in a pot and cover with water. Bring to a rapid boil. Boil for 5 minutes. Remove pot from heat and allow to sit for 5 minutes. Drain hot water and replace with cool tap water to cool eggs. Peel and enjoy.
Peel and chop hard boiled eggs. Place in mixing bowl. Add all other ingredient and mix well.
